Pemanfaatan Minyak Atsiri Kayu Manis Sebagai Bahan Aktif Coating Berbasis Kitosan Untuk Mencegah Penurunan Kualitas Buah Pepaya (Carica Papaya L.)

Abstract


ABSTRAK
Penelitian ini bertujuan untuk mengetahui pengaruh pelapisan (coating) berbahan dasar kitosan dengan penambahan minyak atsiri kayu manis pada konsentrasi berbeda terhadap parameter kualitas buah pepaya varietas Calina selama penyimpanan 8 hari pada suhu ruang. Rancangan percobaan menggunakan rancangan acak kelompok (RAK) faktorial. Faktor pertama adalah kitosan dengan dua taraf konsentrasi (1,5% dan 2% (w/v)), faktor kedua adalah minyak atsiri kayu manis dengan empat taraf konsentrasi (0%; 0,3%; 0,6%; dan 0,9% (v/v)), dan satu perlakuan kontrol (tanpa pelapisan). Susut bobot, kandungan total padatan terlarut, perubahan warna kulit, dan keparahan penyakit diukur dalam tiga ulangan. Perlakuan kitosan 2% (w/v) dengan minyak atsiri kayu manis 0,3% (v/v) menunjukkan hasil terbaik dalam menghambat pertumbuhan mikroba dan mempertahankan kualitas buah pepaya. Pengaplikasian pelapis (coating) berbahan dasar kitosan dengan penambahan minyak atsiri kayu manis memiliki potensi yang menjanjikan untuk memperpanjang umur simpan buah papaya.
